I've tried logging in to the demo store admin as described in the forum and the email and password dont seem to work. Can someone let me know what these might have changed to?

unfortunately we had to deactivate the admin section for the demo store because we don't have an automated reset script yet.
The good news are that we're working on that :). A solution should be available soon after the SilverCart 1.3 release.
Until then you would have to download and install the shop on your webserver / local system to have a look at the admin section.
